  • 300 grams gluten-free flour
  • 50 grams modified corn starch
  • 10 grams dry yeast
  • 250 milliliters warm water
  • 30 milliliters olive oil
  • 20 grams sugar
  • 5 grams salt


  1. Prepare the Yeast Mixture: Dissolve the dry yeast and sugar in the warm water. Let it sit for 10 minutes until it becomes frothy.

  2. Mix Dry Ingredients: In a large bowl, combine the gluten-free flour, modified corn starch, and salt.

  3. Combine Wet and Dry Ingredients: Pour the yeast mixture and olive oil into the dry ingredients. Mix thoroughly until well combined.

  4. Knead the Dough: Knead the dough until it becomes smooth. Place it in a warm area to rise for about 1 hour or until it doubles in size.

  5. Second Rise: Transfer the dough into a bread mold and let it rise for another 30 minutes.

  6. Bake: Preheat the oven to 180°C (350°F). Bake the bread for 30-40 minutes or until the crust turns golden brown.


  • Water Temperature: Ensure the warm water is between 40-45°C (104-113°F) to activate the yeast effectively.
