Pregelatinized starch is a kind of modified starch with simple processing and wide use. When it is used, it is only necessary to use cold water to make paste, which avoids the trouble of heating gelatinization. It is widely used in medicine, food, cosmetics, feed, oil drilling, metal casting, textile, paper making and many other industries.

 

Gelatinization principle

The role of starch granules in swelling, splitting and forming a uniform paste solution in water at appropriate temperature (starch from various sources requires different temperatures, generally 60~80 ℃) is called gelatinization. The essence of gelatinization is that the hydrogen bonds between the ordered and disordered (crystalline and amorphous) starch molecules in the starch granules are broken, and they are dispersed in water to become colloidal solutions.
